Flour Free Waffle

Protein Waffles
1/2 Cup Old Fashioned Oats
1/2 Cup Low Fat Cottage Cheese
2 Eggs
1/2 Tsp Baking Powder
1/2 Tsp Vanilla
1/2 Tsp Cinnamon
Dash of salt
I also added 1 teaspoon of pumpkin spice to add flavor.
Mix and add to your pan or waffle pan. Be careful not to over load the waffle maker or you will end up with a mess.
It's a mess trying to clean this up because you can't stop it from poring over the sides. Christopher always helps me cook. I have to say some of our funniest moments are in the kitchen. He thought it was going to explode. I love cooking with my kids. They are a riot I tell you. We hit the deck not once but twice. The last time it made noise we really did think it was going to explode. Thankfully it didn't and our breakfast came out just fine. We added some fruit and a little nectar. You haven't lived until you had nectar.

Protein Balls

Something simple to make if you aren't a big breakfast person. Take a handful or 1cup of each.
-  coconut
- peanut butter
- granola
- honey
- rolled oats

- Protein powder

- Sometimes I will add chocolate chips 

Mix together roll into a ball place on parchment paper on a cookie sheet.  Place in the frigerator overnight or until cold. 
Eat and enjoy your breakfast on the go.

Tortilla Soup

Here is the tortilla soup recipe from one of the readers.


2 cups of the shredded chicken
One 32oz box of chicken broth
One can corn(drain)( I used fresh corn )
2 handfuls chopped cilantro
One squeezed lime
One can diced tomatoes (reg size)( Again I used fresh tomatoes and cut them into pieces)
One can diced tomatoes w/ chilies (if you can't find the can get another can of diced tomatoes and a can of diced chilies)( I used only one jalapeno pepper I really don't do hot stuff my boys and hubby do)
1/2 large yellow onion
One can black beans( I used fresh beans and boil them first before adding which I'm not sure I like)
2-3 table spoons of tomato paste
2 teaspoons of cumin
2 teaspoons of chile powder
2 teaspoons of garlic powder


Dump everything in a pot and simmer for ~30 minutes. Garnish with cheese and crispy tortilla strips!

Peaches and Cream

I love smoothies it helps me stay on track here is another one to try. This time it's not my own it's from Kayla Itsines website. I follow her on Instagram she is amazing. She is lean and mean her workouts are apart of my workouts daily. I have been doing them at nights to total my day at 3 hours of working-out. It is a lifestyle I don't see it as a chore or something I have to do. I enjoy it. This month has been a little hard considering that I have had a sore throat now the rest of the family has it too. I hope we will be back on track soon. Until then eating right will help maintain what I already have accomplish. SEXY IS STRONG!!!

  • 2 ripe peaches, pitted, cut up or 2 cups frozen peaches
  • 1 frozen banana (remove skin before freezing)
  • ½ cup almond milk
  • ¼ cup quick oats
  • ¼ cup fresh orange juice
  • 1 tsp agave or pure maple syrup for added sweetness (optional)
  • 1 tbs chia seeds

  1. Place all ingredients in a blender and let them sit for 5 minutes so that the oats and chia seeds have a chance to soak.
  2. Blend until smooth, scraping down the sides if needed.

Strawberry Mint Banana Smoothie
2 cups of milk (almond milk)
1 mint leaf
1 tsp cinnamon
1 tsp of vanilla
cup of ice
Then blend and enjoy

What kind of fruits do you like? I like any kind of fruits. My love for fruits and veggies grew stronger with my second child. My hubby being the best daddy in the world already with our first son made sure I was eating right meaning five servings of fruits and veggies daily. I tell you he was such a pain how he hovered over me. I have to admit I loved the extra attention he gave not that it was anything different from before. I did get a kick out of not having to get up to get  my decaff ice tea.  I have him to thank for a healthy pregnancy. He made sure we were taken care of. I think he should go to school to be a doctor. He is kind with people in the hospital when I was hospitalized for dehydration a few times. It was nice to see his caring side but he has to blow things up instead. That's my Marine! (laughing) He is so unpredictable at times. I love it! What I know is he will do anything for our family. He is a strong role model for our boys. 

Some facts about one of my favorite fruits I grew to love while I was pregnant with my Popsicle. Mangoes smoothies are the best!

Clears skin
Mangoes help to clear clogged pores and make your skin acne free. You can treat these problems effectively either by consuming mangoes or by applying them to your face. You can find many beauty products containing mango in them. You can also make mango scrub at home by mixing mango pulp and oatmeal.

Improves Digestion
Like papayas, mangoes are also good for the digestive system. It promotes proper assimilation of the nutrients in the body. The fiber contents found in them prevents constipation.

Effective for Diabetes
Mango fruit ranks low on the glycemic index i.e. 41 to 60, so a moderate consumption of the fruit would not do any harm to the diabetic patients. Further the leaves of the mango tree can help regulate the insulin levels. Take a few leaves of mango tree and boil them in water, leave them soaked in this water over night and then strain and consume this water in the morning.

My Favorite Mango smoothie
1 cup of peach yogurt
1 mango
2 cups of milk ( I use almond milk for a kick of change)
1 banana

A Start to a Great Morning

3 apples
Half a pineapple
2 mangos
2 kiwi fruit
Wheat grass
Green Tea and just a little of garlic.
Love this drink so do my boys.

Strawberry Blast

1 cup of strawberries
1 cup of soy milk
A little bit of honey to taste
A dash of cinnamon
A little dash of  pumpkin spice but not to much unless you like it. Sometimes it can be a little overpowering. I make this shake all the time its yummy and very soft after a evening workout. I just thought I would share. Goodnight my readers.

Green Monster Smoothie

1 banana, roughly chopped 4 or 5 strawberries 1/2 cup fresh blueberries 1 small peach, peeled and roughly chopped 1 heaping cup (or more) fresh spinach leaves, thoroughly rinsed splash vanilla soy milk 1 tablespoon Greek yogurt 2 teaspoons honey 1/2 cup crushed ice

Place all ingredients in a blender and blend until smooth. Serve immediately. *this recipe makes a very large smoothie- two could easily share.

I made this this morning and I have to say I will make it again.

Sugar Cookie Martini

Bloggers Adam and Joanne Gallagher from Inspired Taste make a martini that’s reminiscent of cookies and milk.

2 tablespoons (1 oz) vodka 2 tablespoons (1 oz) chocolate liqueur 1/4 cup (2 oz) Irish cream liqueur 1/4 cup (2 oz) half-and-half 2 teaspoons butterscotch syrup Ice 1/4 cup candy sprinkles

1. In cocktail shaker, add all ingredients except sprinkles. Shake until cold. 2. Dip rim of martini glass into water then into sprinkles. Pour martini into glass; top with more sprinkles.

I made this let me tell you its worth it!

Let's talk about Heaven

Get ready to go to heaven on earth with Carrabba's Tiramisu, lady fingers dipped in liqueur laced espresso, layered with sweetened mascarpone, Myer's Rum and chocolate shavings. Whoohoo! Here is my Picture from last night,

We took our friend out last night for his Birthday. He turned 33 years old. He is still very young. I just had to brag about this yummy melt in your mouth dessert. I think I may just go back for a double  chocolate martini. I ate a lot of  food yesterday. I don't know where my appetite came from but it was like I haven't ate in weeks.  We had such a blast! If my P90 X guy was here I know what he would say. It's bad,Bad ,Bad! I don't care I will just have to do three workouts in one day instead of two all next week. You have to live a little. Make life fun at any given chance you get. Don't let it pass you by it could be your last. I just can't make this an everyday thing. I might not look good as a 300 pound Mexican!
My hubby and I have never been there before yesterday but I think it may be our second favorite restaurant besides the the sea food place by St. George Island. We are also a huge fans of sea food. Steve just will not order the whole fish with eye balls next time we go. It's a lesson well learn all menus should have pictures for each items.  They have a great menu not to mention the drinks.  Awesome! Yummy Food

 I have been looking at this site it's a must but I warn you it will make you want to eat. Look at all this yummy food like.

Avocado BLT with Fried Egg And Chipotle Mayo It makes my mouth water just thinking about it. I haven't had this in years. I'm for sure making it for lunch.

How about a cup of coffee?

Today I had to have a cup of coffee to try out my homemade vanilla coffee creamer. In a mason jar add 2 teaspoons of vanilla,14 oz of skim milk and one 14 oz can of sweetened condensed milk. Once in the jar put the lid on and shake what your momma gave ya but don't hurt yourself. ( I love that saying lol) The next step is to add it to your cup of delicious coffee. Enjoy my reader's!

Homemade Banana Ice Cream

I had this great idea to make some yummy ice cream since I didn't want to go to the store. I took out four frozen bananas cut them in half. I added a touch of honey not to much. Just a little bit of milk to make it  a little fluffy in my ninja. Bam we have homemade banana ice cream. I'm awesome! The kids and hubby loved it. I do have to give my hubby some credit for the thought of a hit of vanilla. Which made it of course a little more yummy.

Polish Foods

Polish food has a reputation for being heavy. Polish immigrants brought their cuisine to America and other parts of Europe, which has influenced regional cuisine. I remember the first time I cooked Pierogi's for Steve. My family loaded him down with the potatoes dumpling. Up to this point Steve never had a Pierogi. Who doesn't eat a Pierogi? Steve now loves them along with kielbasa and Sauerkraut which we have for Christmas ever year.  Stuff cabbage has been a childhood favorite of mind. If you never had it before you should.  It is a little bit of ground beef, pork, rice and spices to help along with the cold winter months. You can have it really anytime you feel the need to cook. Enjoy as I will today when I make these dishes to share with my family.

Sweet Tomatoes

Cherry Tomatoes Nutrition Information 
These little tomatoes pack a big punch. I grew these in my garden for my nephew Landen. He loves these things. I have also found out that Christopher and I do as well. These are a great snack food on the go. Steve thought I was pregnant again. I would just wander down to the garden pick some tomatoes and go about my day. Vitamins and Minerals are loaded in these little red balls of deliciousness. These are very good to eat if you are an athlete or pregnant. Cherry tomato has less 1g of protein and 4 g of carbohydrates per serving. That's great to hear. This is another all time favorite in the veggie world. Check them out. They also go well on a salad.

New Foods

Christopher and I have had a thing for green peppers lately. I'm not sure why but we love them. If you cut a green pepper up like an apple dip it in some Cesar dressing it's a very good snack. I have never been the one to eat anything green but a salad every once in awhile. I guess I have my wonderful hubby to thank for this. You see he was very picky about what I ate when I was pregnant with Popsicle. He would drive me crazy! The one thing I would argue about with him was having a cup of coffee. I never drank coffee until Justin. One day at work I turned into a demon when I smelled it. "The girls were like you can't have coffee blah blah blah." Someone was going to give a cup of coffee or else. Don the backroom coordinator gave me a half of cup of creamer and just a little bit of coffee. It was the best thing I ever tasted until Justin made me puke it up five seconds later. Once he was born Steve had me a cup of coffee from Tim Horton's in his hand. He is the best! To this day that has been our only argument in our marriage.

Why Is Bell Pepper Good for You?Green Peppers are a good source of Vitamin C which I didn't know. It helps with rough skin which I have. I never go a day without lotionize. It helps with eye sight with a little bit of Vitamin A by your side. It's good that I can eat these. It has helped in the losing the baby weight game. Which I'm still working on I'm happy to report I have lost four more pounds last week. It brings me to 138. I can't wait to get to 135. I still can't get Jay and Steve to eat them but I'm working on it. If you have any other foods that you like please tell me about them.
